We propose three kind of menu wich you can compose on the set menu underneath. Based on fresh products, following seasons and market’s offer, each dish is prepared with all Chef’s attention.

Starters

– Cold Duck leaver with Quinces and dried fruits, Daddel’s Chutney and Yuzu, puree of beets

– Crunchy Calf’s head and Small-grey Snails, emulsified butter with garlic and parsley, salad

 Fish – Meat main courses

– Ray, Endives stewed and Spinach, zabaglione with Citrus fruits

– Pork’s tournedos in Satay (peanuts), white beans Tarbais, Mushrooms

Cheese – Dessert

– Cheese plate from Bordier

– Citrus fruits on  jelly of Corsican’s Clémentine and Poppy, Matcha tea biscuit and Touron de Jijona’s ice cream

– Declension of Ices and Sorbets and Madeleine

– Purple figs stuffed with a Combawa’s Chibouste on a cookie, freeze Cottage cheese

– Foie gras fried with a crispy bread on a Tartar of Oysters and duck breast, cream of Sweet chestnuts

– Crab and Celery, green Apple, Avocado,  vinaigrette of Citrus fruits in the squid ink and Salad

– Sweet bread of Limousin, caramelized Endives, creamy Salsify and crumble of walnut, juice of roast

– Supreme of Mallard in Verjuice, candid red Cabbages, Butternut, Quinces caramelized

– Pork’s tournedos in Satay (peanuts), white beans Tarbais, Mushrooms

– Fried Breton’ scampis, puree of white Beans Tarbais, Pécharmant juice, soft Onion of the Cévennes

Cheese – Desserts

Brochettes of exotic fruits and Citronella caramelized, cone filled with lime and sorbet pina colada

– Half crunchy sphere of Meringue, creamy Dark chocolate Manjari and Chestnuts like a Mont Blanc, sorbet of white grapes Chasselas of Moissac
