We propose three kind of menu wich you can compose on the set menu underneath. Based on fresh products, following seasons and market’s offer, each dish is prepared with all Chef’s attention.

Starters

– Semi-cooked Duck leaver with Sea urchins and Nori, Salad of Radish Red Meat and Sesame, Chutney of Dates Medjool in Yuzu

– Tuna marinated in Pesto and petals of Sundried tomatoes, Burrata and squid ink

 Fish – Meat main courses

– Cod browned with Satay (peanuts), Spinach and Risotto of Crozet, Creamy sauce of Shells and Sarazin’s seeds

– Stuffed Rabbit with Girolles and Chorizo, Purée of fresh chickpeas

Cheese – Dessert

– Cheese plate from Bordier

– Strawberries and Rhubarbs candied with Violette, Creamy Violette, Sorbet and meringue

– Ices cream and Sorbets, Madeleine

– Meringue tart with Ugly grapefruit, Tangerine Sorbet

Main courses

– Wild turbot, Potatos from Ré and smoked Eel, Salicornias, Emulsion of Shells

– ½ roasted Lobster, its clows in ravioli, around the Artichoke and Chanterelles

– French Beef with Colonata’s Bacon, Spinach, fine Tart of mini raw and cooked vegetables, aubergine, black garlic’s juice

– Different parts of Lamb differently cooked , Creamy Hummus of Tarbais’Beans end slice of Swiss chards in the meat juice
