We propose three kind of menu wich you can compose on the set menu underneath. Based on fresh products, following seasons and market’s offer, each dish is prepared with all Chef’s attention.

Starters

– Cold Duck leaver pressed with summer truffle, jelly Porto, green beans salad with pine nuts and Chutney Dates Yuzu

– Tataki of Tuna in sesame seeds, variation around tomatoes; in Tartar, sherbet, ravioli and chutney

 Fish – Meat main courses

– Cod with Sarasin’seeds, mini vegetables

– Veal, Conchiglionis with Mushrooms, Spinach and Parmesan cheese, Sucrine lettuces

Cheese – Dessert

– Cheese plate from Bordier

– Strawberries marinated in Basil on a Shortbread cookie Muesli, Combava, Basil & Strawberries’ sorbet

– Varation of Ices cream and Sorbets, Madeleine

– Tatin of roasted Apricots on a Spiced biscuit, Almond’s Ice cream

– Warm foie gras, cracks of Dragées, around the Rhubarb, sauce Soya/ginger

– Crab and Celery, green Apple, Avocado,  vinaigrette of Citrus fruits in squid ink, Salad

Main courses

– Wild turbot, potato’s of the iland of Ré in a juice of Fish soup, braised Fennel and stewed Salicornias

– French sweet bread, Swiss chards and marrow, green Gnocchis of Swiss chards

– ½ roasted Lobster, its claw in zucchini flower, Chanterelles with fresh Almonds

– The half-pigeon with Mace, its supreme roast and its crunchy thigh, cannelloni of Celery and puree

Cheese – Desserts

– Cube of Dark, praline-flavored Chocolate, Caramel, white chocolate ice cream
